Sweet Potato Hash

Sweet Potato Hash

  1. Using the grating disk of your food processor or your hand grater, grate the sweet potatoes. You should have about two cups — no worries if it’s more or less.
  2. Heat the oil in a large skillet to shimmering. Add the onions and cook until soft and translucent — about four minutes.
  3. Add the sweet potatoes. Mix into the onions. Cook, stirring every few minutes, until the potatoes are cooked through, 8 − 10 minutes. Start checking at the six minute mark to ensure you don’t overcook your potatoes.
  4. Add the spinach and cook until wilted — a minute or so.
  5. Season to taste. Serve.
